Hi Lee,
It took me a while before trying install OS X on my
7300.
My advice --you just have to go for it and trust your
experience/abilities to solve any unexpected problems.
A. As far as I know on a 7300 you need to install a
pre-9.2 OS like 9.1 and apply the 9.2 patches as
described in at:

I'm still using 9.1 on my "A" partition. It works
perfectly. I may try the 9.2 patches at a latter
date.
B. You probably need to install an earlier version on
OS X before you attempt the 10.1.5 upgrade. At least I
did.
First I Installed OS 10.0x, then upgraded to 10.1 at
this point I had to install both the security update
and installer update (in that order) before installing
my present 10.1.4 . I plan to go to 10.1.5 soon. You

C. I know nothing about NU for OS X. I do use it on a
second drive running 8.6 on this same 7300. Can't see
any reason it would not work and a 3rd partition of
the same drive.
Other suggestions:
1)Disconnect an external devices (SCSI/USB/Firewire,
etc) before installation.
2)Pull internal PCI cards (use the on board video).
3)Run a low level media test for bad blocks on OS X l
drive before you attempt installation. My first
install attempt at OS X failed when the installer
found some unexpected bad blocks. A low level format
of the HD solved the problem. I am now running 10.1.4
and 9.1 on two partitions (lower drive bay) and OS 8.6
on drive in upper bay on a 7300/200.
After the OS X installation I connected all my SCSI
devices and replaced my video card and everything
worked in OS X. It is time consuming but the results
are impressive!!
