To do so, put the parameter "mailTemplate" in the workflow context. This parameter reference a mail template under this path: /modules/mail/config/templates/YourTemplate. In this template you can define different parameter as the body path for freemarker email, from parameter... If you have some more specific questions don't hesitate.
