Hm, I don't think it's that hard to create a customized karaf with just one maven pom.
You just need the assembly plugin and the features plugin, actually this worked for me already with Karaf 2.2.0 :) Just use the features plugin to copy all needed artefacts in a temp. folder and wrap your customized Karaf with the assemblies plugin. that's all it takes. You might need to tweek a cfg. file here or there for your customization but that's the stuff you need to do anyway.
