Some of these things also work without the Eclipse UIMA plugins.

Have you tried uninstalling the UIMA plugins from Eclipse and installing UIMA 
and UIMA-AS at the same time?
Have you ever added/removed stuff from the Eclipse "plugins" folder? In that 
case, Eclipse's internal plugin registry might be messed up.
