Still thinking about the example database it occured to me, why not look at what is here now.

Ninth Avenue Software is using OpenOffice 2 as a demo vehicle for their accounting package 'Gemstone', as announced on this list. That demo is available at http://www.ninthavenue.com.au.

The folks at OOOAuthors.org have been working on developing a Base users manual. For this they have developed a schema and partial use case for an example database. The subject is a light library check-out / check-in system. :-)  Writers pick an example around books, go figure.

At OOOForum.org there is an example of a three table database for employee information. This simple beast is yours truly's contribution.

There are two additional database Base applications that are ready for release ( but not quite available for download, yet  ), by the folks at e-easel.org. Both of these will be released into the public domain.

Maybe something will spark an idea from these.
