if there was a way to keep updates that you do not want or need for what
ever reason not to show up after you tell it to pass. I know it bugs the
heck out of me to keep seeing that update reminder only to see it is
again for a dictionary that I did not install nor have no occasion to use.

The simple solution is to open the "Extensions Manager" and "Remove" the
unwanted extensions/dictionaries. Then you only get update reminders for
the ones installed on your system.
Actually, it's not quite so simple. On my copy of OOo3.0.1, the 3
supplied dictionary extensions (English, French, Spanish) are "locked"
and the Remove button is not available.
I don't know if or how they can be unlocked; their presence (and
occasional updating) doesn't get in my way or annoy me, so I've never
tried to find out. Could be something to mention in the documentation,
though, for the benefit of others.
