Help documents are PDFs because it's not expected you'd change them.
However, the original documents are available, though I don't know where.

These user guides are made by OOoAuthors and you can find the original
guides (also in *.odt) at www.OOoAuthors.org. Unfortunately the site
cannot be accessed at this moment.
You will also find translations of the guides in other languages as well.
Would you be willing to contribute (proofreading or editing), you are
more than welcome. ;-)
