If the recipients of your email don't have OpenOffice.org, then they can't read them. So you have the following options: 1) suggest to your partners to install OpenOffice.org (it's free, easy to use and does not interfere with an installation of MS Office) or ask them to get the ODF-plugin for MS Office. 2) You can save your files in .doc or .xls format. I do recommend, that you save your files first in the odf-format and only when you're done with everything, then chose "save as". 3) You can save your files as .odt or .ods. If your partners don't need to modify anything, then you could just export to pdf. OpenOffice.org has this ability built-in, so this is pretty easy to do. I hope, that this helps you.
