I'm in way over my head.

Probably not but the terminology could confuse things.

I'm running OS X 10.4.3.

Ah ha! Then you need to get out your CDs and install X11. The
setup guide will help you get this organized ( See
http://documentation.openoffice.org/setup_guide2/index.html ) and pick
the one for whatever release you have. An alternative could be to
install NeoOffice. See
http://porting.openoffice.org/mac/ooo-osx_downloads.html for details.

I've never heard
of OOo.

Short for OpenOffice.org. Two capital 'O' characters and a single
lowercase 'o'.

Thank you for your attention.

Your are welcome and a happy New Year to you.

Hello. When I try to start OpenOffice, it asks me for my X Window
server. What is an X Window server?

It is the windowing application. Before we can give you a more complete
answer, we will need to know which OS and which release of OOo.
