It's more than likely noone will even know that you didn't use MS Word.
But you won't know until you actually try it, and then at absolute worst
it will be something very small that you can easily change.

If you have an existing MS Word document or template that you use for
minutes and that looks normal when loaded into OpenOffice, then I
wouldn't expect it to change when you edit it and save it again in MS
Word format. But only experimentation will confirm that.

Do you expect others to be able to edit these documents? If not, then
you could consider exporting them in PDF format. These will be readable
anyone if they have Adobe Reader - which most people have already if
they use the web).
