Nobody's threatening you with bodily harm if you do not use Microsoft products. Nobody made you save your files in any format that you didn't choose. Nobody forced Windows down anyone's throat. Could your employer require Windows? Sure they could. It's their computer. You don't want to use it - get another job. You were looking for work when you got hired. You can do it again.
