I fear I'm once again meddlin' wi' things I ken nuthin' aboot, but does the
procedure outlined in the Slackware section work for an Ubuntu distro ?
Could it be used to download and install the OOo 2.1 version ?...

You create it. See
http://documentation.openoffice.org/setup_guide2/2.x/en/SETUP_GUIDE.pdf
and look for the Slackware section. You need the utility rpm2tgz.
