I am using Ubuntu 7.10 with OpenOffice 2.3. There is no fault of mine because I have not tampered with any settings. It is exactly as it was installed. Someone suggested right clicking and selecting Edit Paragraph Style and then the tab Font, and seeing what language was selected.

Here's a question... if the languages are not available, why the "genius" inclusion of them? It should be programmed to only include those languages that are available. Or at the very least, be intelligently programmed that, if a language is not available, to default to one that is.

When I install Windows, the selections are made for Canada. When I install Word, it is set to the default American spelling. So is OOo for Windows. When I install Linux, the selections are made for Canada. OOo Writer defaults to your selection for the OS, which again is not my fault of "messing with settings." If it does not exist, it should default to something that does. If English (CA) does not exist, it should default to the equivalent English (UK). But this suggestion did remedy the problem. So thank you.
