Ok, I tried now and could reproduce the behaviour you see. If I create a
new style from selection then all the properties of the character are
applied to the selection (look at the "contains" section in the
organizer page of the style to see what you will get). 
I guess this is in line with the user expectation.

In order to achieve your desired result (e.g. change only one property)
and still being able to create styles from selection, you will need to
make the change you want to a section of text formatted with default
character. In this case it will all work.
