What happened during the install process was that you were given the
option of associating .doc, .xls and .ppt files with OpenOffice.org
(OO.o). Based on your decision at that time OO.o asked Windows to change
the way you see the shortcuts to these files in Windows Explorer and to
alter the default program for opening these files to OO.o.

All this is in no way permanent, for instance if you are using Windows
XP you can: 
 * Right click on one of these files.
 * Choose "Open With..." from the context sensitive menu.
 * Then tick (Or "check" if you are a USA citizen) the box at the bottom
  This tick box makes the next change global.
 * Select the program you wish to open the files with (such as Word).
 * Click OK

You file associations as controlled by Windows will now be restored. If
you are using another Operating System other than XP (the most
common) you may want to search help, look for "File Associations".
