When you install an application in Windows, the installer asks (every properly programmed application installer should) whether you want certain files to be associated with the application being installed. You can choose there if you want Windows to associate .doc files with OOo or not, or you can choose if you want certain image files to be associated with IrfanViewer or not. After the installation, Windows will change the icons of the files accordingly. You are in no way forced to associate .doc files with OOo.

In any case, once you have installed an application, you can always change the file association from Options menu from an application.

BTW, IrfanViewer is a pretty nice piece of image viewer (and editing?) application. One of the things I like best in it is its ability to do batch processing --- apply some operation on a bunch of image files in one go.
