In my obvservation and speculation, it has nothing to do with kosher and
everything to do with PR. Beards were commonplace in the early days of
the church. Modern society sees beards as less-professional, and so
church leaders and missionaries (and as a wacky side effect BYU
students) don't do beards in our day.
