The way I understand this you have two choices.
- Back up the virtual as if it were a physical server. That is install
backup s/w inside the guest and backup all the important parts
- Backup the virtual disk file. We love this solution as it is fast but
you have to understand that the disk file will be inconsistent if the OS is
running. So far as I know, backing up a snapshot would have the same
issue. We have had a lot of luck with this kind of backup, but it will
depend completely on your setup. Test, Test, test
