Hi VFB!

I've tied for over 35 years, so have the typical accumulation of materials
needing organization and storage. Can't say I have lucked into the ideal
arrangement spanning two tying areas, but can offer a few tips that have
worked for me.

Sorting materials and supplies:
This one comes from a local fly shop owner: when you are faced with
sorting and organizing a large quantity of stuff, first spread out a large
bed sheet on the floor. Dump unsorted stuff in one area and start making
piles on the sheet that organize the materials into this-and-that. After
you have your final piles, put the materials into your storage units of
choice. This works great for sorting flies, too.

My favorite storage:
http://tinyurl.com/lvuq2l7 These bins, with the interleaved hinged tops
are an ideal size for storage, stack neatly, and you never lose the lid!
They can be had individually at the Dollar Tree chain, or you can order
them in lots of 36 for $36. Very economical, durable, and portable.

Go from the opposite end:
Rather than spending a lot of time organizing materials, I have found that
I prefer approaching it from the opposite end. I have a certain set of
flies that I tie all the time (can't beat continued fishing effectiveness).

I get gallon size zip locks with the fancy plastic zip pulls, and collect
the materials I need for that particular fly and variations. When I am
ready to resupply that fly, I just need to grab one bag, and I have it all.

The side benefit is that I will need multiple units of certain supplies
(ie. spooled tinsel) and thus, rarely run out of a material right when I
need it. Some other bag will have the extra spool. These bags are also
terrific for travel, as I just have to grab the bag I need for the fly I
want to tie on the road.

A section of my tying storage has a collection of these bags, and I spend
90% of my time drawing from that area. The rest is pretty dead, but
necessary storage, and that is handled by the usual cabinets and assorted
plastic storage bins.
