'Pavlov's Trout' gets an enthusiastic vote from me too. Additionally, you might check out 'Montana Time' by John Barsness, and 'The Fish's Eye' by Ian Frazier. Both were very imaginative and enjoyable. Frazier's book has some terrific offbeat essays, such as fishing for stripers in downtown Manhattan, and another about eating mayflies.
