Bill,
A professional fisherman puts the skins in the freezer for us. But I guess your local fishmonger will be able to help you too. Thanks for the compliment - I tie them a little different now, though. Give me your address and I'll send you a couple of extras to fish.
BTW, Another Muddler that has done really well for me is the Minky Muddler:

I don't fish them a lot because the ES Muddler is a much faster tie ;-)

I just gotta chime in here. Martins eel skin muddler is awesome. I haven't
been able to tie one that comes out as beautiful as Martins yet and I can't
bring myself to use his (could I order a replacement???) But I do like to
use it as an example fly. There is a picture of it on my website if you
folks would like to see it. Martin is a wonderful tyer and his muddlers are
pure art... not to mention great fish foolers.

PS-Martin, where do you get the eel skin?

For the record, using eelskin for a muddler wing is not my idea - Jan Reniers of Holland showed it to me, and I think that the Scots used eelskin long ago. Jan's flies are on Henk's site. This Muddler is a great pattern for Lake Oostvoorne. Martin

You refer to the Aal Soup they serve in Northern Germany?
Eel soup wasn't made from Eel in the past. Nowadays they use to put
Eel in it to avoid the questioning of the tourists.

I would add smoked Eel to the list. Hmmmmm....

BTW: Mart Westbeek uses Eel skin for muddler wings. Met him during a
show here in Cologne yesterday.
