Actually, they taste like chicken, as they say. Squirrels are good to eat. I usually stew them, with a little bacon grease and chopped up bacon bits - all the other stew stuff. They're small enough that you have to leave the bones in, and I only use the bigger bits - legs etc. The rest can be browned in the oven and turned into stock.
Fox squirrels are MUCH bigger than grey squirrels, and a bit tougher.
My father liked them fried. They come out much like rabbit.
They both make better gravy that bald eagle and spotted owl. <g>
