Another great book though done in black and white, is Helen Shaws Flytying..she does a great simple job of explanation. I'd also suggest reading A.K. Best's Production flytying..I still refer to it as well as the benchside reference. Al and Gretchen Beatty have some great simple flies for beginner videos that are really great. Hope this helps.
