I'm curious, do you really need to put them in the fridge? I thought the whole point of pickling something was to be able to store it at room temperature. Is the fridge step essential or just a preference? And if they are stored in the fridge while the pickling process takes place, can they be kept at room temperature afterwards? The ones I see sold at convenience stores are always sold at room temperature.
