After I tie in the hackle in front of the post, I am wrapping the hackle down from the top (well, 1/2 way or so) in a clockwise direction. the hackle either unwinds, breaks, twist, or comes out looking like poo-poo.

Your hackle's stems are probably too stiff to wind
properly.
Get some fresh Whiting hackle from Byard. Tell him what
size you want - get a pack of the 100's.
That should solve all your problems.
