Chuck, Are you trying to start a new thread- ways to eat fish? I once tried garfish fritters, and they were really good. Take one large garfish, nail him to a tree by his snout, belly out. Take one axe, machete, or chain saw and cut belly from butt to bow, clean out, hose down. Spread open and nail in place. Take a sharpened spoon and begin scooping out the meat, discarding the bones. Put meat in mixing bowl, combine with bread crumbs, chopped bell peppers, onions, garlic, diced turtle meat, sausage bits, cajun seasonings, salt and cayenne pepper. Mix well, make small patties (small hamburger sized), dip them in cream or eggs and dredge in cajun fish fry batter. Cook in skillet with hot Crisco oil until golden brown. Serve with a bowl of okra gumbo and some hot french bread and cold root beer.
Right now I'm into grilled wild salmon bbq'd on a cedar plank with lemon pepper and a little cajun spice.
