You can do that just be setting AppleTalk to the printer port and transferring the files over via Personal FileSharing. If you want full time access to the net from the SE then you would need LocalTalk Bridge.

The SE will be able to go as far as the G3, but won't able to connect to a
Leopard server without TCP/IP.

Also, be aware that if the G3's HD is HFS+ (which it probably is) then
that may well crash AppleShare when attempting to connect from the SE to
the G3, and selecting that volume.

No it won't, HFS / HFS+ is at a level that is hidden by AppleShare. I've accessed an HFS+ volume on the server from an SE, Plus and various other pre OS 8.1 Macs many times with no trouble (at least not from HFS+).
