Road apples are poorly designed macs, like the LCII. If it lags running in 16bit, set it to 256. There's really no difference unless you're gaming and most games from that era that are any good will work just fine in 256.
System 7 (or at least everything after 7.0.X) in general is an unstable crashy pile of poop, but 7.5 does indeed seem to perform slightly better.
