So, the MB in my ColorClassic shipped with a specific version of
System 7.1P - but my memories of that OS on my friend's LCII were a
nightmarish cascade of bomb after bomb (hence, "crashy pile of poop"
is so apt).

Is there a more stable version of 7.x before 7.6 or even 7.5? or did I
just get the wrong classic Mac? :) Probably no way of using system
7.0.x or even 6.0.8 on this one I'm guessing…

I got my other 2GB external SCSI drive working, so I may do an install
of the original, then then 7.5.3 or 7.5.5 to see what I come up with.

Any particular programs or regimens I could run to accurately test the
stability?
