I am trying to use a sound program called Audiocorder to digitize
tape-recorded interviews with my Centris 650. I have done this
successfully on other machines, including PBs and and an LC580.

When I plug the recorder into the microphone jack at the back of the Centris
and try to record, the signal from the recorder seems a lot stronger
than when I use the LC580.

Any idea why the signal from the mic jack on the Centris 650 (OS 8.1, no
CD-ROM) would be hotter than on an LC580 (likewise OS8.1)? I can't see
where the "Monitors and Sound" control panel allows adjustment of the
mic jack, only the volume of the Mac's speaker.
