Basically, you won't be able to do anything on your list with just
VoiceOver.
 
That is my opinion only,

Hi iPad, iPod and iPhone users

 

Could you please share your views on how accessible are the office programs
in iOS?

How do you rate the depth of accessibility in office application with regard
to some of these  below features? ( completely inaccessible, somewhat
accessible or fully accessible)

(Please keep in mind that These are just a few items I'm looking at, but
feel free to bring in your views on any other relevant ones that you feel
worth mentioning here.)

.         Text attribute - font, colour, borders, shading, background,
superscript, subscript, and so on.

.         Page layout - headers, footers, cover page templet, page breaks,
page numbers and so on.

.         Text layout - paragraph, bullets, numbers, line spacing, tables
and  so on.

.         Objects - diagrams, charts, pictures, clip arts, symbols and so
on.

.         Keynote - editing slides, slideshows, object positioning,
animation and so on.

.         Calculation - formulas, fill series, cross reference of cells,
generating pivot tables, pivot charts and so on.

.         Selection - selecting tables, selecting pages, worksheets, cells,
slides, objects and so on.

That's all I can think of now, let me know if something covertly or
otherwise directly flashes in your mind
