Since you said you tried the gmail app I assume you use gmail in which case you should be able to specify whether your messages are deleted on the server when you delete on your phone or not. I am not a gamil user, but I think you may have to go to Mail settings on your iPhone, then double tap on your account, look for "Advanced Settings" and see if there isn't a setting in there to accomplish what you want.
