Based on what your iPhone 5S is reporting in Settings, you're still running iOS 9.3.5. I would expect that if you start the update to iOS 10, it will offer you the latest version of that which is available. When I updated my iPhone 6 to iOS 10 from 9.3.5 using iTunes, I had already downloaded version 10.0.1 to my computer but it asked me if I wanted to check for updates before installing and it installed the latest 10.0.2 when I confirmed yes.
