This is how I do it too. When I two finger double tap to answer an incoming phone call, and I want to answer it on speaker phone, I then hold my hand over the face of the phone for a split second, and I'm in speaker phone mode. I love this feature of my IPhone for sure. Pretty handy dandy indeed!

A friend of mine tells me the easiest way actually is to just wipe your hand crossed the proximity sensor which is at the top of the phone and that works very well instead of hitting the speaker button.
