To each his own, my friend, to each his own. However, one does not need to go into the settings area of Watch OS in order to enable/disable Digital Crown Navigation mode. One only need perform a 2-finger, triple-tap of the display.

One cannot toggle-off Water Lock when VoiceOver's Digital Crown Navigation mode is enabled. So, what I do is to disable Digital Crown Navigation mode just before engaging the Water Lock. When I'm ready to disable Water Lock, I simply turn the Digital Crown until normal mode is restored. Just select pool swim within the workout app, set the pool length tap the start button and you are off! Selecting pool swim automatically engages the water lock feature so you will need to rotate the digital crown once you have finished your swim to enable normal functionality.
