I hate it when you know more than me and freely admit that this is easier than turning off Voiceover! Of course that only is the case if you remember to turn off digital crown navigation before you enable the waterlock, if you forget and turn waterlock on first then the 2-finger triple tap won't work and the only way to turn it off is to get rid of Voiceover.

One cannot toggle-off Water Lock when VoiceOver's Digital Crown Navigation mode is enabled. So, what I do is to disable Digital Crown Navigation mode just before engaging the Water Lock. Just select pool swim within the workout app, set the pool length tap the start button and you are off! Selecting pool swim automatically engages the water lock feature so you will need to rotate the digital crown once you have finished your swim to enable normal functionality.
