Wonder if this is orientation related, I always do mail, indeed most things on the iPad, in landscape mode. From scratch, I think it will open in the default mailbox and in a message, but there's a button in the top/left which always points back up a level. When I'm at mailboxes, I open the Unread one, and then I have a list down the left side column with all unread message threads. A thread will open to a new side list with one message open, but sidebar of message list is still down the left side. I tend to touch middle of the message area, then do a 2-finger flip up to read from the top, and then touch the left side again when I've heard enough and choose a new message. I go back to top/left corner for the button to back up a level and can flick up on that thread and double-tap delete to lose the whole thread, and carry on down other unread stuff. This is how I get through mail on the old iPad mini and have done since I first had one.
I hear the mail will work like the phone if you stand it up in portrait mode. When you open a message to read it, on the phone, a two finger flick up gets you only the message text, that is, the thing you want to read. On the iPad, you get a lot of extra junk before you get the text. Unless that has recently changed which is possible, because I haven’t used mail on my iPad mini in a little while.
