Mary, My experience with mail on the iPad has been similar to yours. In fact it was the change you mentioned in which a two finger flick up reads a bunch of stuff before the message that ended my reading of mail on the iPad. I still don't know why that change was made.
I would also be very interested in hearing how mail can be efficiently managed on the larger screen.
