WE were able to take in a VIP tour of the Mondavi winery in California, (a hugely famous label do to a connection through a friend,) in 1995. Sadly, there were two FedEx pilots on the tour who were only interested in buying land to make money off growing wine grapes. To keep this short, when we got to the serious part of the tasting, it came up that we had drank a bottle of chardonnay the previous night that was 8-years old, (fabulous and unusual as it shouldn’t have been good after that long.) The tour guide was impressed, but the pilots asked, how many cases did you buy? We responded, just that one, and we’d kept it for a special occasion. The pilots were amazed and said that, they go through 2 cases of wine at a dinner party for 6. For the uninitiated that is 24 bottles, so 4 bottles each over an evening … it is a wonder they could fly in an airplane too. The tour guide ignored them after that. We saver wine, rather than drink to get drunk. Hence, wnating to take care of the few special wines we save. IN about 45 minutes in the basement it reads: 60.6 degrees and 50.7 % humidity. The temp is gradually dropping and the humidity raising, but I suspect they are near their final readings.
