With a Google Home speaker you can simply say "Hey Google, pairing mode" or "Hey Google, pair a device" Then go to Settings > Bluetooth on your iPhone, find the Google speaker, it will be called what ever you named it, and tap on it and it will connect. I just did this with my google Mini in the bedroom and it paired just fine, at first Voiceover came out of the speaker, then I went into the "More" section for the speaker and under DCevice Type selected "Speaker", Voiceover then switched back to the phone after a few seconds, but when I played my Audible book it played on the speaker.
