I would use the iPhone Voice Memos app and put the money into a portable power bank if you think the phone charge won't last through the time you need to record. Or, the $4.99 Just Press Record application which I have used until my iPhone 16 Pro and the updated iOS 18 that allows Voice Memos to record in Stereo. The sound quality is excellent! It is easy to upload the files with either app over Wi-Fi to OneDrive on your home Wi-Fi network, or to DropBox over any Wi-Fi network. It isn't fast, to transfer the file, but it works. Then you can download it to your computer for editing. I have been using Voice Memos to record concerts and it works quite well. Interviews should be a snap with it.
