When you say that the person you have deleted from contacts still exists in your messages app, do you mean that there message history still exists or that when you use the Add contact button they still appear there or finally that they still appear as an auto complete option in the "To" field. I guess you are referring to them still appearing in the autocomplete list. If so, I haven't looked into this for the messages app but it is probably similar to the mail app. With the mail app, there's no way to remove old email addresses from the autocomplete field. Thankfully though the list is sorted by how frequently a particular address is used. I once had made a mistake in typing in an email address in the mail app and from that point forward, the mail app would offer this incorrectly spelt email address as an autocomplete option. I didn't realise it at first and used the incorrect address a few times. It took a while before this incorrect email address was deprecated in favour of the correctly entered one.
