Hmm, the iPad must handle email differently. I do have some old messages in my In Box that I haven't filed yet, but the iPhone just downloads the last 50 messages.
I don't see how to do this on my iPhone, but is there a way to unsubscribe to your All Mail folder? If there is then these messages wouldn't be synced between your iPad and Gmail.
