On the mac you can try Mozilla Thunder bird, it seems to be the only client
on both mac and windows machines that gives you the option to delete emails.
I have not found a way to do it from I O S devices.

Hmm, the iPad must handle email differently. I do have some old messages in
my In Box that I haven't filed yet, but the iPhone just downloads the last
50 messages.

I don't see how to do this on my iPhone, but is there a way to unsubscribe
to your All Mail folder? If there is then these messages wouldn't be synced
between your iPad and Gmail.
