I no longer use Windows, having transferred to the Mac in 2011. On the Mac, the 
process is slightly different. As it has been a couple years, I cannot provide 
exact instructions for Windows iTunes.

When you are in the main list, you down-arrow to the iPhone selection. Press 
tab to get to a series of radial buttons. Each radial button is for a different 
aspect of your iDevice. Since you want to move books from an app on your 
iDevice to your computer, you need to select the apps radial button by pressing 
either space or enter on it (I think). You then tab to the information area. 
Tab through the columns until you find the table which says something about 
transferring information between certain apps and your computer. Find the app 
that has the information you desire in the table. With the app highlighted, tab 
to the button that tells iTunes to show the information in the app. Find the 
information (book in this case) that you want to transfer to your computer and 
find the information you select to tell Windows where to save the book.
