Hi Neil, I am guessing from your question that you are purchasing audio books from the iTunes store on your phone. If so, I would recommend that you connect your phone to iTunes, and than choose the Transfer Purchases option from the File Menu. This will transfer a copy of your purchased book to your computer and when you delete it from your phone, it will not be deleted from your computer. My apologies if my assumptions are wrong.
