VO losing focus may be the same bug I'm seeing in feeddler, although I
haven't seen this in many other apps. As I said, this wasn't fixed for me.
I haven't noticed a screen sensitiviy myself, but the release notes do
say the following bug is addressed in IOS 7.0.3:
- Fixes an issue that could cause VoiceOver input to be too sensitive
I'm not aware of an accessibility issue with iMessage, and I havn't had
any issues with iMessage myself, but the release notes call out two
iMessage bugs fixed with IOS 7.0.3:
- Fixes an issue where iMessage failed to send for some users
- Fixes a bug that could prevent iMessage from activating

The most frustrating bug I deal with in IOS 7 is that my focus in Feeddler
jumps to the top of the page every few minutes, making it hard to get through
my news feeds. This bug was not fixed in IOS 7.0.3.

I have a medically complex son and my cell phone is our life line to his many
specialists. For this reason I haven't upgraded to IOS 7. I'm interested in
upgrading BUT not until the accessibility bugs have been worked out.
