Hi Lori, connect the device to iTunes, locate the screen for your device, check the encrypt backup option and give it a password. Once you've done that, you in future can go to the File Menu, choose your device's name from the device's submenu, then choose backup. If you use iTunes for Windows, you may find the December 2012 and January 2013 FSCasts helpful in getting familiar with iTunes.
