I have never put a phone into DFU mode, but according to what I read about it, you should first turn your phone off completely after connecting it to iTunes. Then press the power button for 3 seconds, follow this by pressing the home button for 10 seconds (don’t let go of the power button) and then let go of the power button, but continue to press just the home button for another 15 seconds or so. I’m just repeating instructions I read on a few different websites. Jonathan may well have done this and started without turning off the phone first so it might also work that way.
