First of all, if you have a brandnew iPhone pressing the home button 3 times
quickly should start Voiceover.
Anyhow, if you want to do it via iTunes, hook up your phone. Find the iPhone
button and activate it. I assume you are using iTunes 12 by now. After a few
tabs you get to a treeview with all your items like Summary, Apps, Music,
Tones etc. These used to be radio buttons in iTunes 11. It actually doesn't
really matter since both in iTunes 11 the Summary radio button was selected
by default and in iTunes 12 the Summary item in the treeview is the first
item which you get to by default.
All you really have to do is keep on tabbing a lot, probably around 40 or 42
times. You will come to where you have your device's serial number
displayed, then you get to the Check for Update and Restore buttons and so
on. Eventually you will get to a button called "Configure Accessibility" and
here is where you press the spacebar and you can turn on Voiceover.
But I would try a triple click of the home button first to see if that
doesn't do the trick because it should.

I know that during past ventures into iTunes I stumbled over a feature that
would permit one to enable VoiceOver from the iTunes screens. But for the
life of me, I cannot now find that feature now that I need to enable
VoiceOver on my newly acquired iPhone 6.
Can anybody give succinct, step-by-step instructions as how to do this in
iTunes?
